Irish Car Bomb Cupcakes

1 DH Triple Chocolate Cake mix
3 eggs
1/3 c. sour cream
1 c. Guinness Irish Stout
1/2 c. vegetable oil
1 tsp. baking soda

Mix per package directions.  Pour 1/2 c. batter into 24 muffin tins.  Bake at 350 for 20-25 minutes.  Let cool. 

1 can Dulce de Leche caramel 
4 T Jameson
1 T. Heavy whipping cream

Heat on low and whisk until well combined.  Let cool. 
Hollow out middle of cupcake appx. 1 inch deep cavity, reserve cake balls.  Spoon appx. 1 1/2 - 2 tsps. caramel and replace cake ball on top of cake.  

1 stick of butter
1/2 c. shortening
1/3 c. Bailey's Irish Cream
4 1/2 - 5 c. powdered sugar
Mix all ingredients until light and fluffy.  7-9 minutes.  Pipe icing on cupcakes.  Add a dollup of caramel to the top of each cupcake.
